Whenever I go home there are a few things I just love to eat, and one of these staples is pickled red beets and eggs. Sounds weird right? Well, take my word for it… the most delicious thing in the world!
Tim’s parents recently moved to a little house on a Mennonite farm, and for the first time his mom has a huge garden and planted tons of veggies. Two full rows of lovely beets! She’s had a wonderful growing season for a first time gardener, and Ada the Mennonite farmers wife helps her with the weeding and planting.
This weekend Tim and I just had to help thin out her rows of beets, and we brought two huge bags of beets back to queens with us. I washed them and boiled them yesterday, and made two batches of pickled beets. Yum!

Here’s the recipe:
Clean the beets first leaving the taproot and 1″ of stem at the top
Bring them to a boil in a pot of water, cover and reduce heat for 25-35 mins until fork tender
Drain beets in colander, rinse in cool water, and the skins will slide right off!
Cut of root and stems, and slice beets. Put them in your jar.
Pickling juice:
1/2 cup apple cider vinegar
1/2 cup water
3/4 cup of sugar
2 tsp of pickling spice
1 large sweet onion sliced
Put all of these ingredients in a small sauce pan, bring to boil then reduce and simmer until sugar is desolved and onions are beginning to cook. Pour over beets in jar. Let stand in your refrigerator for 24 hours, turning occasionally. Add a few hard boiled eggs, whole, with shells removed to pickle with the beets. YUM!

About a month or so ago I bought a great suit from missbrache on etsy. I hadn’t been swimming in a long time, but my aunt recently put a pool in her back yard so I had to think about a swimsuit.

It’s so comfortable and totally flattering, and I’m really excited to wear it this weekend while catching some sun with my cousins!

Tim came down to Philly for the weekend. It is SOOO weird not living together… we like… date.. again haha. My mom and Bob came to visit yesterday, and since I’ll be moving soon we hit up all our favorite philly spots. It will probably be the last time we’ll be able to together for a long while.
This weekend is the kind of weekend I’ll miss spending in the Philthy-city.
